is there such a thing as an activity log on a computer where you can track what someone has been doing on it? ie, are they using the internet when they should be working, then clearing the history to cover their tracks?

Keylogger. Logs...well...keystrokes.

Monitoring activity on the server/network may be a lot simpler though.

If someone is monitoring my internet usage at work I'm in serious trouble. So many wasted hours.
